First Dish of My 2026 Cooking Challenge

I’m challenging myself this year by making national dishes from around the world. First up was the national dish of Japan, ramen. I was intimidated at first because I thought ramen broth would be complicated and intensive. The recipe I used was easy. I sauteed green onions in vegetable oil with garlic, ginger, and crushed red pepper flakes. I then added chicken broth, beef broth, soy sauce, and fish sauce. After that came ramen noodles, shiitake mushrooms, corn, and bok choy. After ladeling the soup into bowls, I added char sui (Chinese bbq pork) I made previously, nori, more green onions, cilantro, and jammy eggs I had already boiled and marinated. I topped everything with a drizzle of chili garlic oil. Now, some dishes I make are good, some are okay, and some are misses. For me, this ramen dish was an A+! I’m definitely going to be making it again.
